Eggplant semolina

It is not always easy to accommodate the eggplants, but it must to consumed, as they promote collagen production and are low in calories.
So here's a recipe for an original meal.
We can use semolina or tabbouleh or even rice.

Ingredients

  • Eggplant: 100g
  • Tomato: 50g
  • Onion: 20g
  • Lemon: 5g
  • Olive oil: 1g
  • Parsley: 1g
  • Salt:

Ustensiles

    Oven.
    Saucepan.

Preparation


    Cut the eggplant into small pieces.
    Cook it in the stove, or better on a grill, coated with oil.
    Heat water and drop semolina in it, then leave it inflate 5 minutes.
    Mix everything and season with parsley, salt and pepper, a little chili powder
    eventually.

Serve


    Warm.
