Lotte or monkfish (Lophius), or Lota lota, is a river or lake fish. It can measure 50 cm.
It is also called burbot from the french name Barbot, not to be confused with barbel, another kind of fish.
We can use fresh tomatoes to be cooked separately or from a box to save time.

Ingredients
- Lotte: 100g
- Tomato: 50g
- Onion: 10g
- Lemon: 5g
- Olive: 10g
- Garlic: 2g
- Oil: 2g
- Saffron: g
- Chili pepper: 1g
- Salt: g
Ustensiles

Saucepan.
Preparation
Make a marinade of oil, pepper, maybe a few cloves.
Cut the lotte into chunks and marinate 1 hour in this sauce.
Fry the lemon, onion, garlic in oil, 10 minutes.
Add the cooked tomatoes, lotte and marinade.
Sprinkle with saffron.
Bake another 15 minutes.
Add olives.
Cook 5 minutes.
Serve
Warm.
